Have you ever baked your own pretzels? Well then it's about time. In time for Oktoberfest, you can impress your family and friends.

500g spelt flour
1,5 packets dry yeast
2 tsp. sugar
2 tsp. salt
50g cold butter
250ml cold water
Caustic soda
2L water
1 sachet of sodium bicarbonate
1 tsp. salt

Step by step instructions
First, put all the ingredients for the pretzel in a mixing bowl. The dough must then be kneaded for 10 minutes, so that a firm smooth dough is formed.
Then let the yeast dough rest for about 1-2 hours. The dough should not rise due to the cold butter and cold water. The dough will be a bit firmer than a classic yeast dough.
After about 2 hours you can now shape the pretzels. Divide the dough into nine equal pieces. Before you can form the pretzels, you have to fold the dough. To do this, press a piece of the dough into a flat rectangle. Then fold the dough twice in the middle to form an elongated tube. (Feel free to look here, all the steps are shown in the form of a video). Now the can shape and fold the pretzel as you know it classically.
The baking soda: When the pretzels are formed, bring the 2L of water to a boil. When the water boils, gradually add the baking soda to the water (be careful, it foams a lot!) The pretzels must then bathe for about 10 to 20 seconds.
In the last step, cut the pretzel on the thick side and sprinkle with salt. They must now be baked for 20-30 at 180°. Your homemade pretzels are ready.
